ARTISAN BÛCHETTE WHITE with burrata, avocado & pea, radish, and basil-mayonnaise dressing.
INGREDIENTS
- Burrata cheese
- Avocado
- Peas, frozen
- Mix of fresh green herbs and cress
- Basil, fresh leaves
- Radish, sliced
- For the mayonnaise dressing: egg yolk, mustard, white wine vinegar, Worcestershire sauce, sunflower oil, pepper and salt
METHOD
- Blanch the peas in hot salted water.
- Blend the peas with the avocado to puree in a blender. (add a few drops of lemon juice)
- Mix the basil with the ingredients for the mayonnaise in a blender and work-up the mixture with the sunflower oil. Season with salt and pepper.
- Compose the sandwich.
- Close the sandwich and press a little.
