ARTISAN BÛCHETTE WHITE with burrata, avocado & pea, radish, and basil-mayonnaise dressing.

INGREDIENTS

  • Burrata cheese
  • Avocado
  • Peas, frozen
  • Mix of fresh green herbs and cress 
  • Basil, fresh leaves
  • Radish, sliced
  • For the mayonnaise dressing: egg yolk, mustard, white wine vinegar, Worcestershire sauce, sunflower oil, pepper and salt

METHOD

  1. Blanch the peas in hot salted water.
  2. Blend the peas with the avocado to puree in a blender. (add a few drops of lemon juice)
  3. Mix the basil with the ingredients for the mayonnaise in a blender and work-up the mixture with the sunflower oil. Season with salt and pepper.
  4. Compose the sandwich.
  5. Close the sandwich and press a little.
