Cod fillet pavé burger with fried leek and “rouille”: a fish-garlic-saffron-cayenne pepper mayonnaise, usually served with bouillabaisse.

- Cod fillet
- Leek cut into julienne
- Rouille
METHOD
- Slice flaguette horizontally and toast or grill halves on the cut-side. Keep warm.
- Grill or pan-fry cod fillet pave. Keep warm.
- Pan-fry or deep-fry the leek, let leeks drain on kitchen paper.
- Spread nice spoon of rouille mayonnaise on both sides of flaguette bun.
- Dress with baked cod fillet and top with the fried leek.
- Close burger and serve.
